Ramadan Kareem ....... رمضان كريم







I wrote this in the air above Istanbul, wanted to share this culinary trip with u all, most of this post will be about Turkish food and restaurants, and what I liked most about it, and since we are heading toward the holy month, I will share my absolute favorite pistachio baklava recipe. Wish u all a blessed, peaceful Ramadan Kareem 

The Ultimate Pistachio Baklava 



For the filling 


500 g excellent quality vibrant green pistachios 





3/4 can sweetened condensed milk
Few drops almond extract
1/2 tsp vanilla extract

You need also


1 pack excellent quality Fyllo sheets
1/2 stick (50g) unsalted butter melted with
4 tbsp ghee

Sugar syrup 




3 cups granulated white sugar 
1 1/2 cup water 
1 tsp lemon juice 
1tsp orange blossom water 

Make the sugar syrup ahead of time 

Mix sugar water and lemon juice in a small sauce pan and cook over medium heat, until sugar dissolves and start to boil, leave it for couple of minutes then turn off the heat and add the blossom water, set aside to cool completely

Brush the baking tray with some of the butter ghee mixture
Grind in the pistachios in the food processor until fine ground then Mix all the other filling ingredients (milk, vanilla and almond extract) in the food processor until you get smooth paste consistency 
Form the pistachio paste into long rounded strips and sit aside ( u can rub your hands with some oil to prevent the paste from sticking) 




Cover the Fyllo sheets with a damp clean towel to keep them from drying out, take one sheet at a time and brush it with the fat mixture, then add one of the pre-made pistachio stripes and roll the dough around it 3-4 times, each sheet should make 2 pistachio rolls. 
Finish the rest of the quantity the same way and arrange them in the baking tray 
Bake in pre-heated oven 180C for 20 minutes or until golden brown 
Pour the cold sugar syrup immediately over the rolls while still hot 
Set aside to cool down and serve at room temperature

بقلاوة تركية بالفستق الحلبي 




الحشوة


٥٠٠غم فستق حلبي اخضر نخب اول


٣\٤ علبة حليب نستلة مكثف محلى 
٤ نقط من نكهة اللوز 
١\٢ ملعقة صغيرة فانيللا 


رح نحتاج كمان 



١ باكيت عجينة بقلاوة نوعية ممتازة 
١\٢ أصبع (٥٠غم) زبدة ذائبة 
٤ ملاعق سمنة حيوانية



للقطر 





٣ كاسات سكر ابيض 
١\٢ ١ كوب ماء 
١ ملعقة صغيرة عصير ليمون 
١ ملعقة صغيرة ماء زهر 

اعملوا القطر قبل بوقت حتى يلحق يبرد 
نخلط السكر و الماء و الليمون في طنجرة صغيرة على النار حتى يذوب السكر، نتركه يغلي لمدة دقيقتين او ثلاث، ثم نرفعه عن النار و نضيف ماء الزهر و نتركه جانبا حتى يبرد كليا 

لتحضير الحشوة 
نطحن الفستق الحلبي في محضرة الطعام حتى يصبح مثل البودرة ثم نضيف بقية مكونات الحشوة ( الحليب، الفانيللا، و نكهة اللوز) و نخلط حتى نحصل على قوام متل العجينة الطرية و لكن يمك


ن تشكيلها 

ندهن اليدين بشوية زيت و نشكل عجينة الفستق على شكل أسطوانات طولية متساوية 
ندهن صينية الخبز بقليل من خليط الزبدة و السمنة
يفضل تغطية عجينة البقلاوة بقطعة قماش رطبة حتى لا تنشف و تتكسر

ندهن كل ورقة من عجينة البقلاوة بخليط الزبدة و السمنة و نلفها حول أسطوانة الفستق ٣-٤ لفات و نقطع بالسكين، كل ورقة بقلاوة المفروض تعمل ٢ رول 
نكمل العملية مع بقية الكمية و نرتب الأسطوانات في الصينية و نخبز في فرن حامي ١٨٠مئوية حتى تتماسك و يشقر اللون قليلا حوالي ٢٠ دقيقة 
نصب القطر البارد فوق البقلاوة و هي ساخنة حتى تتشرب ثم نتركها حتى تبرد تماماً 
تقدم بدرجة حرارة الغرفة 

بالنسبة للأكل بتركيا، زاكي بس ينقصه الكتير من النكهات ، يعني انا برأيي انه نحنا بنعمله بطريقة كتير أطيب بلمستنا الخاصة 
رح اعرض مجموعة من الصور لأشهر الأطباق التركية و الأكل اللي بنباع في الشارع و لبعض المطاعم اللي صورت فيها لانه مو دائماً كنت حاملة الكاميرا مع بعض التعليقات البسيطة على كل صورة 


Regarding food in Turkey, it's delicious, but needs lots of additional flavours, I think we cook Turkish dishes in a better way with our own touch 
I wl show you some photos of Turkish dishes, street food and some of the restaurants we tried, because I didn't have the camera with me all the time






this is street food, dolma stuffed sea shells, Turkish Smit, freshly made lolly pops and basterma, and many more like double baked stuffed potatoes and alot of yummy stuff but i didnt shoot them all
