beautiful As Sunset......أحمروا خدودة من الخجل


من احلى المناظر اللي بحب اتصبح فيها هوه منظر الخضرة و الفواكة و خصوصا ازا كانت نظيفة و مرتبة بشكل حلو و ملفت للعين. تمازج الألوان و النضارة متعة بحد ذاتها ، بالعادة بحب أنقي اغراضي بإيدي مشان استمتع بالملمس و الرائحة الزاكية و هيك كمان بشوف ازا في فواكة او خضرة موسمية نازلة على السوق، بجيب شوي لانه كل اشي بموسمة بكون أطيب. الا اذا مش فاضية بوصي جوزي يجيبلي النواقص. 
هلا موسم البرتقال الأحمر او ( دم الزغلول) الاسم المتعارف عليه اكثر، يا الله شو بحبه و بحب ريحته فيها عطرة مميزة و ازا بدي اوصفلكم اللون ما بخلص لانه اكثر من رائع... كتير بذكرني بألوان غروب الشمس.. مزيج رائع من الذهبي و الأحمر و البرتقالي... سبحان الله 
وصفة اليوم خفيفة لطيفة و سهلة و سريعة كمان 
هيه كروستاتا البرتقال الأحمر. كروستاتا اصلا وصفة إيطالية عبارة عن تارت معمولة بشكل عشوائي  سريع و اما الحشوات فهيه متنوعة جداً ما بين المالح و الحلو 
مشان تعملو الوصفة بدكم تنقوا نوع برتقال احمر حلو نسبيا مشان تطلع ازبط معكم 



كروستاتا البرتقال الأحمر 


للعجينة 


١\٤ ١ كوب طحين 
١ أصبع زبدة (١٠٠غم) باردة مقطعة مكعبات 
رشة ملح صغيرة 
٢ ملعقة كبيرة سكر ابيض 
٢-٤ ملاعق كبيرة ماء بارد 



الحشوة 


٤-٥ حبات برتقال احمر مقشر و مقطع شرحات دائرية 
١\٤ كوب سكر بني 
١ ملعقة كبيرة زبدة 
سكر ابيض خشن للوجه
١ بيض مخفوقة مع قليل من الماء لدهن الوجه 

للتقديم 


عسل 
فستق حلبي 

لتحضير العجينة 





نخلط الطحين و الملح و السكر في محضرة الطعام ثم نضيف الزبدة بالتدريج حتى نحصل على مزيج يشبه حبات الرمل 
نضيف الماء بالتدريج ( ممكن ما نحتاج كل الكمية) حتى تبدأ المكونات بالتجمع بداخل محضرة الطعام، يجب عدم المبالغة في الخلط حتى نحصل على عجينة هشة 
نلف العجينة بورق التغليف البلاستيك و نتركها ترتاح في الثلاجة لمدة ١\٢ ساعة تقريبا 
في هذه الأثناء نحضر الحشوة 
في صينية قصيرة الحافة مغلفة بورق الخبز، نوزع شرحات البرتقال و نرش كمية السكر البني عليها بالتساوي ثم أوزع الزبدة، قطعة صغيرة فوق كل قطعة 
نخبزها في فرن ساخن ١٨٠ مئوية حتى تتحمر و تتكرمل و تتنشف قليلا، ثم نضعها جانبا حتى تبرد
نفرد العجين على شكل دائري، نضع قطع البرتقال المكرمل في المنتصف ثم نرفع أطراف العجين فوقها لعمل حافة للتارت. ندهن بخليط البيض ثم نرش قليلا من السكر الأبيض على العجين و البرتقال 
نخبزها في فرن ساخن ١٨٠ مئوية حتى تنضج و تتحمر من جميع الاطراف، نتركها تبرد على شبك ثم تقدم مع العسل و رشة فستق حلبي على الوجه

Juice of 4 sweet yellow apples 
Juice if half lemon

One of my favorite things to do in the morning is passing by to see the beautiful colorful fruits and vegetables, specially if they are arranged and cleaned up very well. The different shades and great scents coming out is absolutely refreshing.
Usually I like to do my own shopping In order to enjoy the textures and smells, and to go through the seasonal produce and buy some... I find it's the best to try everything in season while still fresh and new, if am busy for some reason I ask my husband to bring what is needed instead.
Bloody oranges now in season... I really love them, amazing taste and beautiful scented aroma, and the color can't tell you how amazing, it only reminds me of the amazing shades of sunset... Subhan Allah. 
Today's recipe is very simple yet delicious, Bloody Orange Crostata... 
Crostata is an Italian version of a tart, rustic style and it has a wide range of stuffings between sweet and salty.
For this recipe you need to stay away from sour bloody oranges, The sweeter the better. 



Bloody Oranges Crostata 


For the dough you need 


1 1/4 cup all purpose flour 
1 stick (100g) cold butter cut into cubes 
Pinch of salt 
2 tbsp caster sugar 
2-4 tbsp of water 


For the stuffing 


4-5 bloody oranges peeled 
1/4 cup brown sugar 
1 tbsp unsalted butter 
Granulated white sugar for sprinkling 
1 egg mixed with lil bit of water to brush the top ( egg wash) 

For serving 

Honey 
Roasted unsalted pistachios 

To make the dough 




- Mix the flour, salt and sugar in the food processor and pulse once, then add the cold butter and pulse couple of time, until the mixture resembles the texture of sand
- add the cold water, one tbsp at a time and pulse again, until the dough start to come together ( you may not need the whole amount of water), don't mix too much in order to have a flaky tart base at the end.
-Cover the dough in plastic rap in disc shape and leave it to rest in the fridge for half an hour.


Meanwhile prepare the stuffingYou need to: 


- in a cookie sheet lined with parchment paper, arrange the sliced oranges in one layer, sprinkle the brown sugar and a knob of butter evenly over the slices and bake in hot oven 180C, until caramelized. Leave aside to cool. 
- Roll the dough into a circle, and arrange the caramelized orange slices in the middle, then fold the dough around the edges to make rustic style tart, then brush with egg wash and sprinkle with granulated white sugar
- bake in hot oven 180C, until cooked all over and have a nice golden color at the top
- Serve at room temperature with a drizzle of honey and some roasted pistachios
