My Every Day Energy Boost

Granola



Sometimes it's easy to say that we want to have a healthy life-style, but when it comes to reality, people loves to enjoy eating their meals without hearing that noisy alarm inside their heads telling them to stop!!!!
Am not a nutritionist, Am a Passionate Home-Cook that loves to serve yummy dishes to my family, but at the same time, i always try to include healthy dishes on the table...

Healthy and yum....yes you can!!!!


Is it about depriving yourself from all what you love??....  Not at all, it's only about controlling what you add to your diet and the amount you add.
 The very most important tip that i can tell you is "Have your Breakfast"....yes it helps out your metabolism as well as digestion, and provides all the energy you need to complete your day.
I absolutely adore breakfasts and cant skip them at all, so go ahead and pamper yourself every morning like i do.
A lot will say that they don't have time to make breakfast every morning because of the crazy life-style, i say try this recipe and thank me later on. 


Granola is a breakfast food as well as a snack, popular in North America, consisting of rolled oats, nuts, honey, and sometimes puffed rice, that is usually baked until crisp. During the baking process the mixture is stirred to maintain a loose, breakfast cereal-type consistency. and sometimes don't in order to have bar like shape. Dried fruits, such as raisins and dates, are sometimes added..Granola is often eaten in combination with yoghurt, milk, honey, and fresh fruits such as strawberries, bananas and blueberries. Granola recipes that include flaxseed, is often used to improve digestion.


Ingredients:

2 cups rolled oats

1/2 cup walnuts

1/2 cup pecans

1/2 cup pumpkin seeds

1/2 cup flax seeds

1/2 cup sunflower seeds

1/2 cup dried cranberries

1/2 cup raisins

1/2 cup crispy brown rice cereal

2 teaspoons cinnamon

1/3 cup brown sugar

1/2 cups light honey

3 tablespoon sweetened condensed milk 

3 tablespoons maple syrup

2 tablespoon Extra Virgin olive oil

Sea salt



Method:


Preheat oven to 180 C. Place the oats, walnuts, pecans, pumpkin seeds, flax seeds and sunflower seeds on a large baking sheet. Add about 2 tablespoons of olive oil and a sprinkling of sea salt. Mix to combine. Roast for about 5 minutes, checking often to make sure nothing burns. Remove the tray and lower the heat to 160 C.
Put the roasted ingredients in a large bowl. Add cranberries, raisins, cinnamon and crispy brown rice cereal. Stir to combine.
Heat up the honey, brown sugar, sweetened condensed milk and maple syrup in a small saucepan, on medium-low heat. Stir until all the sugar dissolves, about 5 minutes. Add the honey mixture to the bowl with the granola and stir until everything is coated with the honey.
Very lightly oil a tart dish with olive oil. Using a paper towel to absorb any excess oil. Pour the granola until the dish, and press down firmly with a spatula. Bake for 15 minutes. Let cool before serving.



Notes:

* If you want to cut granola into bars, store in the fridge. It stays together much

 better when cold. but if you want to have it like cereal stir it twice during 

baking and crumble it in the jar immediately after baking while still warm.


* Feel free to substitute with your favourite dried fruits or nuts, sometimes i use 

almonds, peanuts, pistachios, coconut, dried apricots or plums.... etc. 




In order to make the Parfait you will need:





 * 3 tablespoon granola mix (recipe above).


 * 3 tablespoon of your favourite flavoured yoghurt (preferably low fat one )


 * 3 tablespoon  diced fresh fruits (strawberries, banana, apple, blueberries, 

      raspberries, pineapple, mango.... etc..) 


 * 1 teaspoon honey mixed with fruits 

    

        place one tablespoon of Granola Mix in the bottom of your cup then top it with 1 tablespoon of 

the fresh fruits mix and then with your flavoured yoghurt then repeat again until you fill the cup....
